Pumpkin Cookies

   

OMG, these cookies are always a hot commodity at my parents house. As soon as the end of September rolls around, we all start waiting for the making of the famous pumpkin cookies. It’s a sweet, sweet combination of pumpkin cookie bread, vanilla cake icing, and the ratio of 3 perfect candy corns. Yum.

   

Now please don’t accuse me of candy corn overload on this blog, there’s just no such thing. Unless of course, you are one of those crazy people who dislikes this Halloween staple. I was shocked to read this morning that candy corn makes the #3 spot on The Top Ten Worst Halloween Candies at seriouseats.com. WHAT!?! Blasphemy. (i’ll also disagree with dum-dum lollipops, but that is another story…) Is there anyone out there that does *not* like candy corn? …(is there anyone out there ??)

    i HATE candy corn. i’m not a big candy person in general, but there is something DISGUSTING about candy corn. not really sure what the flavor is, but it’s gross to say the least. but then again i feel like you won’t care about my opinion because i also despise another of your sugary staples- those nasty peeps!

    Sorry, Karen, that link is not MY recipe for “Mom’s Famous Pumpkin Cookies.” Here goes:

    4 cups unsifted all-purpose flour 1 cup granulated sugar
    2 cups quick or old-fashioned oats, uncooked 1 egg
    2 tsp. baking soda 1 tsp. vanilla extract
    2 tsp. ground cinnamon 1 16-oz. can solid pack pumpkin
    1 tsp. salt 1 cup semi-sweet chocolate morsels or raisins (optional)
    1-1/2 cups butter, softened assorted icings, candies
    2 cups firmly packed brown sugar

    Preheat oven to 350. Combine flour, oats, baking soda, cinnamon and salt; set aside. Cream butter; gradually add sugars, beating until light and fluffy. Add egg and vanilla; mix well. Alternate additions of dry ingredients and pumpkin, mixing well after each addition. Stir in morsels. For each cookie, drop 1/4 cup dough onto lightly greased cookie sheet; spread into pumpkin shape using a thin metal sptaula. Add a bit more dough to form a stem. Bake at 350 for 20-25 minutes, until cookies are firm and lightly browned. Remove from cookie sheets; cool on racks.

    Decorate, using white icing to affix assorted candies. I cover each cookie with white icing; then I use green decorating icing (which comes in a can with the nozzle) to add 3 leaves to the stem. Finally I add 3 candy corns to form the eyes and nose. NOTE: Dough may be frozen in airtight container. Thaw in refrigerator; bake as directed.

    Where are my cookie’s? Roscoe better quit drinking at MD’s pub and get around to delivering my cookies ASAP! All I have had to eat for the last two weeks are ramen noodles and sardines on crackers! I need some COOKIES!!!
